Hey throwdown lovers,
I’m literally 22 meals away from hitting 100 meals. With 22 meals left, I have to say I am elated for the home run. As I work towards hitting 100 meals, here is a quick recap of meals 71 through to 78:
Meal 71: Kuku Choma (Grilled Chicken)
I marinated the chicken with lemon, garlic, salt & black pepper then grilled it skin down first in order for it to get grill marks. I then sauteed some peppers with salt and blackpepper and served the chicken on top of the peppers.
Meal 72: Viazi Karai, Bhajias & Mahamari.
This meal right here is a popular breakfast dish in Mombasa. One can also serve this dish with pigeon peas (mbaazi) that go well with the mahamri. You can also make tamarind (ukwaju) that compliment the viazi karai or bhajias.
Don’t you just love the saying (maandishi) on the leso?
Meal 73: Rice with Cumin Seeds, Cabbage & Matumbo (Tripe)
This is such an easy meal to whip up especially once you marinate the tripe overnight/ for 48 hours with natural yogurt, salt, cayenne, black pepper, a little cinnamon, fresh garlic & ginger. I paired the tripe with rice & cumin seeds & cabbage. I’ve shared rice & cabbage recipes here.
Meal 74: Ugali & Matumbo (Tripe).
I used the leftover tripe I made for meal 73 & paired it with ugali.
Tip: A great way to clean your tripe (matumbo):
Soak it in hot water 3-4 times then rinse in cold water then soak them in water again with 1 tsp of baking soda. After like 30 min or less, wash the matumbo with your hands making sure they are clean then place them in a bowl before you rinse them one las time.
*Baking soda is a great aide for the dirt.
Meal 75: “Kenyan” Pancakes x Kenyan Sausages (Farmers Choice) x Scrambled Eggs in a Avocado bowl x Fruits.
Breakfast is one of my favorite meals to have. I have confessed enough times how I can have it anytime of the day. This meal was super easy to make and took very little time. Also “kenyan” pancakes (which are essentially crepes only that people call them “the thin kenyan pancakes) had bananas in them.
Meal 76: Pork Ribs Shoulder x Ugali x Skuma (Kale)
A few weeks ago Fena sent me a whatsapp asking me what it will take for me to throwdown for her. She went as far as mentioning what she would like to eat: pork ribs, ugali & skuma. A few days later I decided to whip this up. I smothered the pork ribs with my bbq sauce, baked them then grilled.
Meal 77: Coconut Rice x Sauteed Kidney x Sauteed Skuma (Kale)
This dish right here was easy to make. I pan fried the kidneys with lots of soy sauce and garlic then added onions and green pepper. As for the rice and kale recipes you can find them here.
Meal 78: Pan Roasted Potatoes x Sauteed Kidney x Sauteed Skuma.
I decided to pair my left over kidney and skuma (kale) with pan roasted garlic potatoes.
